THE NEXT COLLECTION

These are some of the thoughts for the next collection. I am thinking firm favourites like Espresso and Salted Caramel, contrasted with fresh and light flavours like Raspberry and hopefully a new sparkling Marc de Champagne.

Skinny Minis

Notes

 

I was always pleased with the ginger chocolate I make and certainly, it has been very popular.  Then I decided I would crystalise my own ginger rather than buying it in.  Oh boy!  I might be biased but I think it's on another level.  I hope you do too.

I am thinking of introducing the new Ruby Chocolate and am experimenting with pairings. I am toying with the idea of pairing this smooth fruity chocolate with rose. Or I may just combine it with the new Marc de Champagne which I'm hoping will be in this collection.  I'll keep you posted.

 

As some of you will know, February marks the start of the Six Nations Rugby Championship, (some of you may not know nor care) but for me it is a happy coincidence that it is also Seville Orange season and over the years a very enjoyable time is spent watching rugby and making marmalade. It just so happens that  Marmalade and Irish Whiskey is a match made in heaven. 

I'm working on the raspberry chocolate and trying to balance the freshness and acidity of the raspberry with the dark chocolate, whilst creating something that has a reasonable shelf life without adding additives or more sugar.  It's a work in progress. 

You will be able to sample these flavours at the next tasting session and try what's on offer.

The packaging wasn't quite right for the Skinny Minis, some of the thins slipped around and sadly some snapped. I could have looked around for more suitable packaging but that all starts to get expensive -  then I had a brainwave -  Just slip some more in - problem solved.

Out of Season

I make three collections each year, Spring, Autumn and Christmas. Depending when Easter falls I sometimes have a separate Easter Collection and I also make Easter Eggs.

 

Outside of this there is nearly always a little something in the Rosebud kitchen. If only to keep me supplied with my favourites but I am more than happy to share, and my waistline will appreciate it if you want to relieve me of some chocolates.
